Vegetarian Enchiladas

12 Small Corn Tortillas
1 Can enchilada Sauce
1 Can Fat Free refried beans
1 cup frozen corn
1 red pepper
1 green pepper
1/2 of an onion
2Cups lite shredded Mexican cheese
(Shredded chicken can easily be added if you don't want to make it vegetarian)
*Chop and saute onion, peppers, and corn
*Layer refried beans, veggies mixture, and sprinkle of cheese in each tortilla and wrap
*Arrange enchiladas on greased 9X13 pan and top with enchilada saue and remaining cheese
*Cover in foil and bake at 400 for 15-20 minutes
*Top with plain greek yogurt or avocado
