Homemade Granola

1 1/2 Cup Oatmeal

1/3 cup toasted wheat germ (flax seed)

1/3 cup packed brown sugar

1/4 cup coconut

1/4 cup sliced almonds

1/4 tsp ground cinnamon

1 small banana

1/4 cup extra virgin olive oil

1 tsp vanilla

*Put first 6 ingredients (dry ingredients) into large microwave bowl. Stir well and set aside.

*Smash banana into 1 cup liquid measuring cup. When the banana is well smashed add oil and vanilla and mix well.

*Pour the banana mix over the dry mixture. Stir until evenly coated. Do not cover.

*Place mixture in microwave and cook for 3 minutes. Take out and stir well. Place in microwave for another 3 minutes. Take out and stir well. Place in microwave for 2 additional minutes. Make sure to watch while microwaving so you do not burn it.

*Spread hot granola out onto a baking dish and let cool.
